The first thing to understand about a plumbing emergency is that the most valuable action is one you can take yourself, immediately, for free. Close the main. Everything after that is negotiable; the water still running is not.
Your main shutoff is usually at the street side of the house, in a box near the front, or on the wall where the supply enters. If you do not know where it is, find it now — this evening, while nothing is wrong — and make sure the valve actually turns. A seized shutoff discovered during a burst pipe is a bad discovery.
Then call. We answer at every hour, including the ones nobody wants to be awake for, and we would far rather talk you through closing a valve at midnight than meet you at a flooded floor in the morning.

A burst or actively leaking supply line
Close the main first. Supply lines are pressurised continuously and do not stop of their own accord.
Sewage backing up into a fixture
Stop using water throughout the house. Every additional flush adds to what has to come back out, and the contents are a genuine health matter.
No water at all
Could be the main, could be a failed regulator, could be the utility. Worth diagnosing quickly either way, particularly in summer.
The smell of gas
Leave the building first, then call the gas utility from outside. We handle gas line repair, but evacuation and the utility come before any plumber.
